I am a big fan of carrots in chili - yup, great minds- I also usually add some frozen or fresh corn to my chili as it too adds some sweetness and veggie goodness. Chili in huge quantity is a must have here in the winter months. Cook once and eat several times and when the goat babies are hitting the ground at an insane pace I get to eat well too. ~ smooch

That's fairly close to mine, except that I add fresh tomatoes and don't add flour. I don't add carrots either; what do you do with those, sliver or chop them or leave them whole?

Thank you so much, I will try it soon. And just in case you haven't heard this lately Good job on keeping the quit. People who have never smoked think you quit and then that's it but every day for a while you make the decision to keep your quit. I'm a little cheering section, Go LA Go!!

Yum! I don't use carrots in my "red" chili, but when I make green chili stew I use carrots and potatoes, very much like an Irish stew only with green chilis and jalape�os. Someday you should try substituting tortilla chips with sopaipillas. Though be forewarned: sopaipillas are addicting.
