How about lasagna without meat? Souffles, stuffed peppers with brown rice and soy protein, tacos with soy protien and rice, eggplant caponata, bake stuffed potatoes, squash or sweet potato soup

Are lentils considered beans, in this case? If not, you can substitute lentils into any dish that requires beans or make a lentil dish (Dal, etc.). You can also try substituting quinoa, since it's a high protein grain. It really depends on the tastes of the person you're planning to serve.

I'm a big fan of risotto, you can add mushrooms, asparagus, other veggies. Cooked well risotto ends up creamy and hearty!

I felt the earthquake on the beach in Rhode Island, but, at the time, I thought the wind was rocking my chair. My mother said she felt the way she did before she had a seizure. When we got home and heard about the earthquake, we made the connection to what we felt on the beach. Glad you had fun at the fair - I've always loved it. As for vegetarian cooking, it all seems so labor intensive! There's always spaghetti with marinara sauce...

Vegetarian pad thai. It's simple and tastes better than any restaurant. Just stir fry vegetables w/ ginger and onion in thai chili paste, add cooked rice noodles, then vegetarian stir fry sauce. Top with crushed peanuts, fried tofu and cilantro optional. Another good one is vegetarian sushi rolls. Roll up in nori cooked sushi rice seasoned with seasoned rice vinegar: steamed carrots, avocado, marinated tofu strips...adding picked ginger inside is good. Serve with wasabi and soy sauce
