I finally get back into reading d-land, and what's the first thing I see but this! Fried chicken! You made it all sound so easy I was actually considering buying a cooling rack (and spices) so I could do this. Someone in the family has the heavy-duty frying pan, I'm sure. Thanks for this!

I 'heart' my cast iron pan{s}. I use them for just about everything. Mine is huge and heavy and I love it. I can't wait until I can afford to get some other cast iron pans {sauce pans, casserole, etc..}. Makes the best homemade fries ever. {10 times better than anything in a store or cafe}. Also makes a chicken strip my son will eat like he hasn't been fed in a month.

I lost my cast iron frying pan in one of my many moves. Maybe that's why I have never made good fried chicken!

That's not fair -- I've not seen any special cast iron kitchen toys offers at any of the supermarkets in southern Rhode Island.
Your recipe (okay, Mavis' recipe) is making me hungry for some fried chicken!
