Who cut the cheese? Actually GBW cut the cheese. I cut the fudge. Ew. 'Cutting the fudge' sounds even grosser than cutting the cheese. And how mean is that? Insinuating any kind of grossness about the cheese or the fudge is really unfair since they are both excellent. You should buy some. You can buy some from me on Friday if you happen to be at the Podunkville Farmers' Market. I'll be womaning the booth with GBW's fantastic goat wares and hopefully raking in the dough. It'll be fun to shark in person again after lo these many months of sharking in pixel form. Also fun was helping with production and packaging today. I didn't cut any cheese but I did beat some. Maybe there's folks who'd think it cruel to beat innocent freshly born cheese but I swear to you it was necessary. It would never grow up to be good cheese if it wasn't beaten with a big rubber spatula. Besides after the cheese was beaten I smoothed and soothed it. Covered it carefully and put it down for a nap in the fridge. After that I went upstairs and hacked the fudge to bits. Got pretty good at it too. Toward the end I was lopping off hunks of the exact weight GBW asked for. After the carnage I weighed the fudge hunks, popped them into the proper containers and labeled each one. Took the packaged fudge back downstairs and loaded it into the fridge where the beaten cheese was resting. Also in the fridge was some awesome looking marinated feta. I don't even like feta and still thought this stuff looked delicious. My food service experience came in handy, GBW didn't have to waste any time teaching me how to do things all official and sanitary. Any inspectors lurking around would have nothing to bitch about. Gloves, spotless work surfaces, everything by the regs and health dept approved. I'm glad I was able to help with the production today. I'm hoping I can be there every Wednesday. After a few more weeks I should have experience with all of the varieties cheese, fudge and soap and will be that much more knowledgeable on the selling end. Knowing the product is vital. The more I know, the better I sell, the better I sell the more dough she makes, the more dough she makes the more capital she has to expand her business until finally GBW is financially secure and able to rid herself of an unhappy and unwanted relationship which should have been over a long time ago. As I explained to her this afternoon so many were there for me when I was making my bid for freedom it's a happy thing to pay it forward and help someone else as she gears up to go it on her own. Even if you can't make it to Podunkville's market on Friday, support your own hometown farmers' market. Never know how far keeping it local will take you. Going upstairs to cut some zzzzs, ~LA
